Use a spiralizer on its thinnest setting to turn the cucumbers into long thin strands. In a large mixing bowl, toss cucumbers with 1/2 teaspoon of salt then transfer to a colander and let strain for at least 15 minutes.
Meanwhile, in a large mixing bowl whisk together the lemon zest, lemon juice, oil, garlic, the remaining salt, black pepper, and dill.
Squeeze cucumbers to purge them of any remaining moisture then gently toss with dressing and season to taste with salt and pepper. Serve immediately.
