Chilled Cucumber Dill Noodles

These simple and savory lemon, garlic, and dill dressed cucumber noodles make for a refreshing and lean side or salad when the summer sun is too much to bear.

Step 1

Use a spiralizer on its thinnest setting to turn the cucumbers into long thin strands. In a large mixing bowl, toss cucumbers with 1/2 teaspoon of salt then transfer to a colander and let strain for at least 15 minutes.  


Step 2

Meanwhile, in a large mixing bowl whisk together the lemon zest, lemon juice, oil, garlic, the remaining salt, black pepper, and dill.  


Step 3

Squeeze cucumbers to purge them of any remaining moisture then gently toss with dressing and season to taste with salt and pepper. Serve immediately.
