Classic Caesar Salad with Homemade Dressing

This traditional sophisticate dresses Romaine the way it deserves. With class, creaminess and the salty intensity of anchovies (should you choose to include), your senses will delight.

Classic Caesar Dressing:

 

Directions:

 

Step 1
Chop Romaine lettuce and set aside.
Step 2
In a medium bowl, use a fork to mash anchovies, garlic and a dash of salt.

Step 3
Whisk in egg yolks, Dijon and lemon juice.

Step 4
Continuously whisk the mixture while slowly drizzling in olive oil then vegetable oil. Continue until the dressing thickens.

Step 5
Add parmesan cheese and stir. Season with salt, pepper and lemon to taste. Toss with Romaine and croutons and enjoy!
