Much like a good Bloody Mary, this classic gazpacho is savory and refreshing all on its own or the perfect pallet for full-on garnish expression. Grilled croutons, poached seafood, crispy serrano or prosciutto ham, and/or a dollop of crème fraiche will turn this humble summer soup into a showstopper.
Place all ingredients in blender or food processor and blend until smooth and homogenous. Season to taste with salt, pepper, and red wine vinegar then transfer the soup to a sealed container and refrigerate for at least 2 hours or until completely chilled. Evenly divide gazpacho in bowls, mugs, or over ice in tall glasses and garnish with fresh basil. Serve immediately.
