Preheat greased grill, grill pan, or cast-iron skillet for 10 to 15 minutes before preparing corn.
Meanwhile combine Greek yogurt, crema (or sour cream), garlic, lime zest and juice, and chipotle in a small mixing bowl and whisk thoroughly to combine. Taste and adjust seasoning as needed.
Grill corn over very high heat until golden and charred in places, about 3 to 5 minutes.
Generously dress corn with Greek yogurt crema and cotija cheese and serve immediately with limes for squeezing.
