Street Corn

Sweet, char-grilled summer corn, a tangy lime and chipotle infused crema, and salty cotija cheese is all this simple flavor-forward Latin-inspired street corn needs to shine.

Step 1

Preheat greased grill, grill pan, or cast-iron skillet for 10 to 15 minutes before preparing corn.  

 

Step 2

Meanwhile combine Greek yogurt, crema (or sour cream)garlic, lime zest and juice, and chipotle in a small mixing bowl and whisk thoroughly to combine. Taste and adjust seasoning as needed.  

 

Step 3

Grill corn over very high heat until golden and charred in places, about 3 to 5 minutes. 

 

Step 4

Generously dress corn with Greek yogurt crema and cotija cheese and serve immediately with limes for squeezing.
