A hearty yet simple pasta with savory sausage, fresh baby spinach, and burst cherry tomatoes.
Ingredients
- 1/2 lb rigatoni or other short pasta
- 1 lb spicy Italian sausage, casing removed (or sausage of your choice)
- 4 ounces Baby Spinach
- 4 ounces cherry tomatoes
- 3 gloves garlic, grated
- 1 medium yellow onion, chopped
- Salt and pepper to taste
- Parmesan to garnish
Preparation
Step 1
In a heavy bottom skillet, cook sausage, breaking up into small pieces. Remove from pan and set aside.
Step 2
In the same pan, sauté onion and garlic until fragrant. Add cherry tomatoes and cook until they’re softened and broken down. Season with salt and pepper to taste. Add baby spinach and stir until wilted.
Step 3
Meanwhile, cook pasta according to package instructions. Reserve pasta water and add to sauce mixture.
Step 4
Add cooked pasta to sauce and stir to combine. Serve with grated parmesan.
