Ingredients
For the strawberry vinaigrette:
- 1/2 cup strawberries, halved
- 2 tablespoons red wine vinegar
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- salt and pepper to taste
To serve:
- 5 ounces Spring Leaf Mix
- 2 ounces goat cheese, crumbled
- 1/3 cup toasted pecans
Preparation
Step 1
Using a food processor or immersion blender, combine strawberries, vinegar, and honey. With the machine running, slowly stream in olive oil. Season with salt and pepper.
Step 2
Add salad greens to a large bowl and add dressing. Top with halved strawberries, crumbled goat cheese, and toasted pecans. Serve immediately.
