Ingredients
For the herb mayonnaise:
- 1/2 cup mayonnaise
- 1/3 cup basil leaves
- 1/3 cup cilantro
- 2 tablespoons lemon juice
- salt and pepper to taste
To serve:
- 2 ounces Green Lettuce Blend
- 2 slices crusty loaf bread (sourdough recommended)
- 1 avocado, sliced
- 1 tomatillo, sliced
Preparation
Step 1
Using a food processor or immersion blender, combine all dressing ingredients and puree until smooth. With the machine running, add cold water to thin out as needed.
Step 2
Spread mayo on both slices of bread.
Step 3
Top with lettuce, sliced tomatillo, and avocado. Serve immediately.
