Ingredients
- 4 ounces of Baby Spinach
- 1 cup Greek yogurt
- 1 garlic clove, grated
- 1/3 cup toasted walnuts, finely chopped
- Salt to taste
To serve:
- Pita chips, fresh vegetables such as cucumbers, cherry tomatoes, or bell peppers
Preparation
Step 1
Preheat oven to 300° F. Toast walnuts for 8-10 minutes or until fragrant. Let cool and finely chop.
Step 2
While the walnuts are toasting, bring a pot of water to a boil. Blanch the spinach for approximately 3-4 minutes, then immediately place in an ice bath. Drain liquid and chop.
Step 3
Combine all ingredients in a large bowl. Let sit in the fridge for at least 30 minutes before serving with pita chips or fresh cut vegetables.
