Herbaceous greenhouse goddess dressing brings bright flavor to this refreshingly light dish.
Ingredients
For the green goddess dressing:
- 1/3 cup plain Greek yogurt
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1/3 cup basil leaves
- 1/2 bunch cilantro
- 2-3 scallions
- salt and pepper to taste
To serve:
- 5 ounces green butter lettuce leaves
- 1.5 cups cooked shredded chicken
Preparation
Step 1
Using a food processor or immersion blender, combine all dressing ingredients and puree until smooth. With the machine running, add cold water to thin out as needed.
Step 2
In a large bowl, combine shredded chicken with desired amount of dressing.
Step 3
Separate green butter leaves and arrange on a serving platter.
Step 4
Add chicken salad to each lettuce cup and garnish with herbs, if desired. Serve immediately.
