A fresh twist on classic Caesar salad. Nutty tahini-based dressing and crispy chickpeas bring a new dimension of tastes and textures.
Ingredients
For the tahini dressing:
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- 1/4 cup tahini
- 1-2 tablespoons plain Greek yogurt
- 2 cloves garlic
- 1/4 cup parmesan cheese, grated
- salt and pepper to taste
For the crispy chickpeas:
- 1 can chickpeas, drained
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 3 tablespoons extra virgin olive oil
To serve:
- 5 ounces romaine lettuce leaves
Preparation
Step 1
Pre-heat oven to 400°F.
Step 2
Combine the chickpeas, garlic, salt and olive oil in a large bowl and toss to coat the chickpeas evenly. Spread chickpeas on a sheet pan in a single layer. Place in the oven and cook for 25 minutes or until toasted and crisp.
Step 3
Using a food processor or immersion blender, combine all dressing ingredients and puree until smooth. With the machine running, add cold water to thin out as needed.
Step 4
Place romaine leaves in a large bowl, add desired amount of dressing and toss. Top with crispy chickpeas and extra parmesan for garnish. Serve immediately.
