- 1/2 cup cooked quinoa
- 3 ounces Red Lettuce Blend/Cherry Red Lettuce
- 1/2 avocado, sliced
- 4 Lanai Mini Tomatoes, halved
- 1 radish, thinly sliced
- 2 eggs, soft boiled

Preparation
Step 1
Bring a pot of water to a boil. Drop in two eggs, and boil for 6 and a half minutes for a soft, jammy yolk.
Step 2
While eggs are boiling, slice avocado, cherry tomatoes, and radish. Once eggs are cool enough to handle, peel and slice in half.
